01 - Preheat the oven to 425°F. Line two large baking sheets with parchment paper.
02 - Cut the potatoes into uniform ¼-inch thick sticks.
03 - Place the cut potatoes in a large bowl of cold water with the vinegar. Soak for 30 to 60 minutes to remove excess starch.
04 - Drain and rinse the potatoes thoroughly. Pat them completely dry with clean kitchen towels.
05 - Transfer the dried potatoes to a clean bowl. Drizzle with olive oil and sprinkle with salt, pepper, and any optional seasonings. Toss to coat evenly.
06 - Place the fries in a single layer on the prepared baking sheets, leaving space between each piece.
07 - Bake for 20 minutes, then flip the fries and rotate the trays. Continue baking for an additional 12 to 15 minutes until golden and crisp.
08 - Remove fries from the oven, sprinkle with extra salt if desired, and serve immediately.
