02 - Spoon a generous layer of chilled chia pudding into the bottom of 4 parfait glasses or jars. Arrange diced watermelon evenly over the pudding layer. Scatter mixed berries across the top.
03 - Repeat layering process if desired, alternating chia pudding, watermelon, and berries until glasses are filled. Complete each parfait with a final fruit layer and sprinkle granola on top.
04 - Place fresh mint leaves atop each parfait as garnish. Serve immediately while chilled, or refrigerate until ready to serve.
