01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - In a large bowl, toss Brussels sprouts with olive oil, kosher salt, black pepper, and garlic powder until well coated.
03 - Spread the seasoned Brussels sprouts on the prepared baking sheet in a single layer. Scatter diced beef bacon evenly over the top.
04 - Roast for 20–25 minutes, stirring halfway through cooking, until Brussels sprouts are golden brown and beef bacon is crispy.
05 - Remove from oven and transfer to a serving dish. Garnish with fresh parsley if desired. Serve hot.
