01 - Line a mini muffin tin with paper liners or arrange silicone candy molds on a flat, freezer-safe tray for easy removal.
02 - In a large mixing bowl, combine Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Whisk vigorously until the mixture is completely smooth and no streaks remain.
03 - Using a small cookie scoop or tablespoon, fill each liner or mold with approximately 1 tablespoon of the yogurt-peanut butter mixture, smoothing the tops evenly.
04 - If desired, sprinkle dark chocolate chips and crushed peanuts over the top of each filled cup, gently pressing them into the surface so they adhere during freezing.
05 - Transfer the tray to the freezer and chill for at least 2 hours, or until the bites are completely firm and frozen through.
06 - Remove from the freezer and let the bites rest at room temperature for 2–3 minutes before serving to soften slightly for the best creamy texture.
