# Expert Advice:

01 -
  • The potatoes get impossibly crispy on the outside while staying fluffy inside, like little comfort pillows
  • Everything cooks on one pan so cleanup is literally just tossing some parchment paper
  • The garlic and herbs create this incredible aroma that fills your whole kitchen
02 -
  • Do not crowd the pan or the vegetables will steam instead of roast, use two pans if needed
  • The timing difference between potatoes and green beans is real, adding them together from the start gives you mushy beans
  • Resist the urge to stir too often, letting the potatoes sit undisturbed creates the best crispy edges
03 -
  • Spread vegetables in an even single layer with space between pieces, overlap creates steam and prevents browning
  • Let the roasted vegetables rest on the pan for about 5 minutes before serving, this helps the crust set and makes them easier to toss
