01 - Preheat oven to 375°F. Lightly grease a 1-quart baking dish with nonstick spray or butter.
02 - Heat a drizzle of oil in a skillet over medium heat. Add the chopped shrimp and cook for 2–3 minutes until just pink and opaque throughout. Remove from heat and set aside.
03 - In a large mixing bowl, beat together the softened cream cheese, sour cream, and mayonnaise until smooth and well combined.
04 - Stir the sweet chili sauce, sriracha, lime juice, honey, minced garlic, smoked paprika, onion powder, salt, and black pepper into the cream cheese mixture until evenly incorporated.
05 - Gently fold in the cooked shrimp along with half of the mozzarella and half of the cheddar cheese. Mix until the shrimp and cheese are evenly distributed throughout the dip.
06 - Spread the shrimp and cheese mixture evenly into the prepared baking dish. Sprinkle the remaining mozzarella and cheddar cheese over the top in an even layer.
07 - Bake for 18–20 minutes, or until the cheese on top is melted, bubbling, and golden brown around the edges.
08 - Remove from the oven and let cool for 3–5 minutes. Garnish with sliced green onions and chopped cilantro. Serve warm with tortilla chips, sliced baguette, or vegetable sticks.
