01 - Preheat the oven to 350°F.
02 - Lightly butter two small ramekins or ovenproof dishes.
03 - If desired, pour 1 tbsp heavy cream into the bottom of each ramekin.
04 - Crack one large egg into each ramekin, ensuring the yolks remain intact.
05 - Sprinkle each egg with salt and freshly ground black pepper to taste.
06 - Top each egg with grated Parmesan cheese and chopped herbs if using.
07 - Place the ramekins in a baking dish and pour hot water into the dish to reach halfway up the sides of the ramekins.
08 - Bake for 12 to 15 minutes until the egg whites are set but yolks remain slightly runny.
09 - Remove from oven, let cool briefly, and serve immediately with toast or salad.
