01 - Preheat the oven to 375°F.
02 - Place the Brie wheel on a parchment-lined baking sheet or in a small ovenproof dish.
03 - Spread the apricot preserves evenly over the top of the Brie.
04 - Sprinkle the chopped walnuts over the preserves.
05 - Bake for 12-15 minutes, until the Brie is soft and just beginning to ooze but not collapsed.
06 - Remove from the oven and let rest for 2-3 minutes.
07 - Garnish with fresh thyme or parsley, if using.
08 - Serve warm with crackers or baguette slices.
